The Japanese liked Sun fish for display. Here we prepare two of them. You can see the snap-on line with the monofiliment leader and hooks still in the mouth. There is a hose in the gills of a Mahi Mahi. We'd immediately bleed the fish, and put the hose in the gills to get the blood out. Then we'd cool them in RSW, and then pack them in ice in the hold. Top left corner is the door through which we'd pul the fish. The carpet was to keep the fish from bruising.
